Mini Meatloaf image

I love using my mini-loaf pans. These little meatloaves are the perfect serving size :) Also easy to take with you for lunch, or camping

Number Of Ingredients 10

1 large onion, chopped
1 1/4 cups corn flake crumbs
2/3 cup milk
1/4 cup ketchup
1/2 cup barbecue sauce
2 large eggs, lightly beaten
1 tablespoon dried parsley
1 tablespoon garlic salt
1 teaspoon ground black pepper
3 lbs ground beef

Steps:

  • Preheat oven to 375°F.
  • Combine onion, bread crumbs, bell pepper, dry milk, water, 2 tablespoon ketchup, 4 tablespoons BBQ sauce, eggs, parsley, garlic salt and black pepper in large bowl. Add ground beef; mix lightly but thoroughly.
  • Place meat mixture into mini loaf pans. Flatten the top, & cover with remaining ketchup & BBQ sauce mixture.
  • Bake for 55 to 60 minutes or until no longer pink in center. Let stand for 10 to 15 minutes before serving.
