Mild Cheesy Chicken Enchiladas image

Super easy and takes care of my enchilada cravings.

Number Of Ingredients 7

2 c cubed,cooked chicken meat
1/4 c chopped onion
4 c shredded cheddar cheese
1 c sour cream
8 flour tortillas
1 1/2 c chopped tomatoes
1/2 c black olives

Steps:

  • 1. Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish.
  • 2. In a medium bowl, mix the chicken,onion,1 cup cheese, and 3/4 cup sour cream. Disperse the mix evenly between the tortillas. Roll into enchiladas, arrange in single layer in baking dish.
  • 3. In a saucepan over low heat, melt together remaining cheese and sour cream. Pour over the enchiladas, and top with tomatoes and black olives.
  • 4. Bake in the oven for 20-30 minutes, or until hot and bubbly
