MICROWAVE PRALINES image

Number Of Ingredients 6

1 lb. light brown sugar
1 c. heavy cream plus more for thinning later
2 T. light corn syrup
4 T. unsalted butter, cut in pieces
1 1/2 c. toasted pecans, chopped
1 T. vanilla extract

Steps:

  • Stir together the sugar, cream, and corn syrup in an 8 cup glass bowl, stirring until sugar lumps are dissolved. Microwave on high for 13 minutes. Carefully remove - pan will be EXTREMELY HOT!!! Stir in 4 T. butter, pecans and vanilla. Beat by hand for 1 minute until mixture i notably less glossy. Working quickly - using 2 tablespoons - drop onto prepared foil. Add some cream if mixture is too thick. Cool 20 minutes. Eat within 4 days.
