Microwave Peanut Brittle? No kidding. image

My sister sent this to me, she said it tastes just like our grandmother's recipe. I thought she was joking. Turns out it makes darn decent peanut brittle, though not as good as our grandmother's. And, in honor of my grandmother, I'll post her original recipe next.

Number Of Ingredients 6

1 - cup sugar
1/2 - cup light corn syrup
1-1/2 - cups dry roasted peanuts
1 tablespoon(s) butter
1 teaspoon(s) vanilla
1 teaspoon(s) baking soda

Steps:

  • MICROWAVE sugar and corn syrup in large microwaveable bowl on HIGH for 5 min., stirring after 3 min.
  • Stir in peanuts. Microwave an additional 3-5 min. or until golden brown.
  • ADD butter and vanilla; stir until butter is completely melted. Microwave 1 min.
  • Stir in baking soda (mixture will foam).
  • SPREAD mixture onto greased baking sheet or silicone sheet. Cool completely. Break into pieces.
