Michael Symon's Bacon and Onion Jam image

This is not my recipe, I saw Michael Symon cook this on The Chew. He made a grilled cheese with it but I put it on a sandwich made with grilled pork loin and barbeque sauce then grilled it like a grilled cheese. Very good. I was ask to post this recipe is the reason I am posting a Michael Symon recipe.

Number Of Ingredients 10

1/2 lb bacon, chopped
2 yellow onions, sliced thin
3 clove garlic, minced, i used garlic in jar
2 sprig(s) thyme, leave, i used dried thyme
1/4 c apple cider vinegar
2 Tbsp brown sugar
1 Tbsp mustard seed, i used dried mustard powder
1/4 c beer or water
1 Tbsp olive oil
salt and pepper to taste

Steps:

  • 1. Over medium heat cook bacon until crisp. Remove from skillet. Add onions to skillet in bacon fat and cook over low heat 12-15 minutes or until caramelized stirring occasionally. When done pour off excess fat. Add remaining ingredients to onions, except bacon. Simmer until liquid is reduced by 2/3rds and looks like jam. Remove from heat and stir in bacon.
