Mexican Coleslaw image

This is a simple slaw that is a very tasty side to Mexican dishes or even inside a taco. Easily tweeked to suit any tastes. From Eating Well website.

1 (10 ounce) bag coleslaw mix
1/3 cup fresh cilantro, chopped
1/4 cup rice vinegar
2 tablespoons extra virgin olive oil
1/4 teaspoon salt

Steps:

  • Wisk cilantro, vinegar, oil and salt in a large bowl.
  • Add cabbage and toss well to coat.
  • Serve.
