Baked Balsamic Salmon image

With the flavors of basil, garlic and cilantro.

1/3 c olive oil
1/4 c balsamic vinegar
2 salmon filets, skin removed (6 oz. each)
2 clove garlic, peeled and minced
1 Tbsp fresh cilantro, chopped
1 Tbsp fresh basil, chopped
salt and pepper, to taste

Steps:

  • 1. Preheat oven to 375F. Coat an 8 x 8-inch baking dish with non-stick cooking spray.
  • 2. Mix oil and vinegar together in a small bowl.
  • 3. Place salmon fillets in prepared baking dish and rub garlic into them. Pour oil and vinegar over them, turning once to coat.
  • 4. Sprinkle with cilantro and basil and season with salt and pepper.
  • 5. Let marinate at room temperature for 10 minutes.
  • 6. Bake, uncovered, for 15 minutes, or until fish flakes easily and is no longer transparent in center.
  • 7. Drizzle some of the sauce over each piece to serve.
