Mexican Citrus Roasted Pork image

Juicy and moist, this pork tenderloin is a flavorful dinner. The peppers add a bit of heat and smokiness which pairs well with the beautiful citrus flavors. It's so easy to make too. We served it over rice and spooned the delicious juices on top. So good!

2 pork tenderloins
2 c fresh orange juice
1 lime, juice
1 1/2 water
2 chipotle peppers, seeded and chopped
1 large jalapeno (or 2 small ones)
1/2 small white onion
1 pkg fajita seasoning, divided use
3 bay leaves, dried

Steps:

  • 1. Take your tenderloins out of the package and dry them with paper towels. Salt & pepper on each side. Sear in a pan on high until they are golden brown on all sides.
  • 2. Combine your orange juice, lime juice, water into your Crock Pot.
  • 3. Add 2 tbsp of fajita seasoning to the juice/water mixture. Throw in your chopped veggies: jalapenos, chipotle peppers, and onions. Add the bay leaves.
  • 4. Put your tenderloins into the Crock Pot, cook on high for 4 hours until it's tender and falls apart.
