Steps:
- Saute onions and mushrooms in butter. Transfer to a food processor and pulse.
- Combine buttermilk, tamari, 1/4 cup ketchup, Worcestershire, oats and eggs. Set aside to soak.
- Combine mushroom mix, ground meats and soaked oats plus about 1 teaspoon kosher salt and pepper.
- Put in lined loaf pan. Brush top with 3 tablespoons of ketchup
- Bake at 350 until internal temp is 145 degrees. (Check at 45 minutes.)
- Make hoisin sauce with hoisin, ketchup, rice vinegar and chile oil in a small saucepan. Bring to a boil and simmer 10 minutes.
- Remove meatloaf from pan and brush sides and top with remaining 3 tablespoons ketchup. Blast under broiler for a few minutes.
