1 teaspoon water
1 egg
1 large egg yolk
1 tablespoon fresh lemon juice, plus
1 teaspoon fresh lemon juice
1/4 teaspoon white vinegar
1/8 teaspoon sugar
1/4 teaspoon table salt
white pepper, to taste (if available, otherwise black)
3/4 cup extra virgin olive oil or 3/4 cup regular olive oil
1/2 cup olive oil

Steps:

  • In food processor, combine water, egg, yolk, lemon juice, white vinegar, salt, sugar, and pepper until combined, about 10 seconds.
  • With machine running, gradually add oil in slow steady stream (process should take about 30 seconds); scrape down sides of bowl with rubber spatula and process 5 seconds longer. Adjust seasoning with additional salt and pepper, if needed.
