MAUI ONION DIP image

Number Of Ingredients 7

2 lg maui or other sweet onions peeled and quartered
1 tbsp olive oil
1/3 c vegan sour cream
1 tbsp freshly squeezed lemon juice
2 tbsp fresh cilantro, roughly chopped
Pinch of cayenne
Salt and freshly ground black pepper, to taste

Steps:

  • Preheat oven to 400*. Arrange the onions in a baking dish and drizzle with olive oil. Toss to coat and roast, stirring occasionally, until the onions are soft and golden, about 1 hour. Let the onions cool, then put them in a food processor fitted with the S blade along with the vegan sour cream, lemon juice, and cilantro. Pulse until blended but still chunky. Season with cayenne, salt, and pepper.
