Steps:
- 1. Wet matzo boards under warm water and break into 2 inch pieces and put into large bowl.
- 2. Fry onions in vegetable oil in lg. pan until translucent.(will brown while cooking with matzo)
- 3. Add eggs to matzo along with salt and pepper. Put in pan and flatten w/spatula, cook on med heat for 5 min. and flip and cook additional 3 min. and serve.
