Mashed Potato Pancake with Gruyere Cheese image

Great recipe to use up leftover mashed potatoes.

Number Of Ingredients 5

4 cup(s) leftover mashed potatoes
2 scallions diced
2 tablespoon(s) mascarpone cheese
1 cup(s) gruyere cheese shredded
3 tablespoon(s) olive oil

Steps:

  • Mix the mashed potatoes, scallions, Mascarpone cheese and Gruyere cheese together.
  • Add oil to skillet. Shape the mashed potatoes into balls and flatten into pancake and fry until browned and crisp on both sides.
