Marinated Vegetable Salad image

The perfect dish for a hot summer day!

Number Of Ingredients 12

1 teaspoon(s) salt
1 teaspoon(s) pepper
3/4 cup(s) rice vinegar
1/2 cup(s) canola oil
1 tablespoon(s) water
1 cup(s) sugar
16 ounce(s) can drained white corn
16 ounce(s) can drained french style green beans
16 ounce(s) can drained sweet peas
1 large chopped bell pepper
3-4 - chopped celery ribs
1 small chopped onion

Steps:

  • Bring the salt, pepper, vinegar, oil, water and sugar to a boil.
  • Boil for 2 minutes and set aside to cool.
  • Combine the remaining ingredients and toss with the cooled vinegar dressing.
  • Chill the salad until ready to serve.
  • This salad is perfect if made the day before.
