Mama's 'special ingredient' pot roast image

This is the way my mama always made her roast. We had it just about every Sunday when I was growing up. The secret ingredient was 'vinegar'. This made it very tasty and very tender.. It's very hard to be precise on the measurements of the ingredients. I've added a little beef broth at times..little more vinegar or water or flour..this recipe really depends on your taste..Please try it and let me know what you think..cooking time depends on size of the roast also..

Number Of Ingredients 8

3 pound(s) chuck roast/pot roast
1/2 cup(s) vinegar
1 teaspoon(s) garlic powder
- salt and pepper
3 tablespoon(s) flour
3 tablespoon(s) oil
1 medium onion chopped
1 cup(s) hot water

Steps:

  • Heat oil in dutch oven, rub roast with 1 1/2 tbsp of flour with garlic powder and salt& pepper to taste.
  • Brown roast on both sides..mix the remaining flour and cup of hot water,vinegar and pour over meat, add onions
  • keep cooking for a few minutes on med to high heat, stirring to blend the water,vinegar and flour to make a gravy..turn heat down and cover and simmer for about 1-2 hours
  • you may want to add more flour for a thicker gravy
