Maine Spiced Cranberry Nut Bread image

We have cranberries here, too!

2 c all-purpose flour
1 tsp baking powder
1 c sugar
1 tsp baking soda
pinch salt
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/2 c orange juice
2 Tbsp melted butter
4 Tbsp water
1 egg
1 c fresh cranberries, roughly chopped
1 c hazelnuts, roughly chopped

Steps:

  • 1. Sift the dry ingredients and spices into a large mixing bowl. Make a well in the cener of the dry ingredients and pour in the orange juice, melted butter, water and egg. Using a wooden spoon. beat the liquid mixure, gradually drawing in the flour from the outside edge.
  • 2. Add the cranberries and nuts and stir to mix completely.
  • 3. Lightly grease a loaf pan about 9 X 5". Press a strip of wax paper on the base and up the sides. Lightly grease the paper and flour the whole inside of the pan. Spoon or pour in the bread mixture and bake in a pre-heated 325 degree oven for about 1 hour or until a skewer inserted into the center of the loaf comes out clean.
  • 4. Remove from the pan, carefully peel off the paper and cool on a wire rack. Light dust with confectioner's sugar, if desired, and cut into slices to serve.
