Maddy's Black Beans and Rice with Cheese image

A simple side dish for any Mexican meal.

Number Of Ingredients 5

15.5 oz. can(s) bush's seasoned black beans
2 c shredded sharp cheddar cheese
2 c cooked white rice
4 pinch fresh or dried cilantro
2 tsp cooking oil

Steps:

  • 1. Preheat oven to 350 degrees. Cook the white rice, following package directions.
  • 2. Lightly coat a small baking dish with the oil.
  • 3. Spread the rice over the bottom of the baking dish evenly.
  • 4. Spread the canned beans (do not drain) evenly over the rice.
  • 5. Cover the beans evenly with the shredded cheddar cheese.
  • 6. Bake until the cheese on top is melted. Remove from oven and sprinkle with chopped fresh or dried cilantro.
