Low-Fat Spinach Balls image

This came from a newspaper columnist that would revise recipes for people to make them healthier... I think her name is Jeanne something. These are yummy.

1/2 cup light mayonnaise
1 cup egg white
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 pinch ground nutmeg
1 large onion, minced
3/4 cup parmesan cheese, divided use
1 (16 ounce) bag frozen chopped spinach, thawed and squeezed dry
2 cups seasoned herb stuffing cubes

Steps:

  • Combine mayo, egg whites, garlic powder, pepper, and nutmet.
  • Add onion, parmesan, spinach (with moisture squeezed out), and mix thoroughly.
  • Add stuffing and mix well.
  • Cover and chill 1/2 hour.
  • Preheat oven to 350°F Grease baking sheet. Roll spinach mix into balls the size of walnuts and place on baking sheet (they can be close together since they won't expand).
  • Bake 30 minutes. Remove from pan and sprinkle with remaining parmesan. Serve hot.
