1 box (9 oz) frozen spinach, thawed, squeezed to drain
1 cup Original Bisquick™ mix
2 cups shredded mozzarella cheese (8 oz)
1 egg
2 teaspoons Italian seasoning
1 teaspoon garlic salt
1 cup tomato pasta sauce, if desired

Steps:

  • Heat oven to 400°F. Spray cookie sheet with cooking spray. In large bowl, mix all ingredients, except pasta sauce. Shape mixture into 1-inch balls; place on cookie sheet.
  • Bake 10 to 15 minutes or until golden brown. Immediately remove from pan. Serve with pasta sauce.

2 cups crushed seasoned stuffing
1 cup finely chopped onion
3/4 cup egg substitute
1 large egg, lightly beaten
1/4 cup grated Parmesan cheese
1/4 cup butter, melted
3 tablespoons reduced-sodium chicken broth or vegetable broth
1 garlic clove, minced
1-1/2 teaspoons dried thyme
1/4 teaspoon pepper
1/8 teaspoon salt
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

Steps:

  • In a large bowl, combine the first 11 ingredients. Stir in spinach until blended. Roll into 1-in. balls. , Place in a 15x10x1-in. baking pan coated with cooking spray. Bake at 350° for 15-20 minutes or until golden brown.

1/2 cup light mayonnaise
1 cup egg white
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 pinch ground nutmeg
1 large onion, minced
3/4 cup parmesan cheese, divided use
1 (16 ounce) bag frozen chopped spinach, thawed and squeezed dry
2 cups seasoned herb stuffing cubes

Steps:

  • Combine mayo, egg whites, garlic powder, pepper, and nutmet.
  • Add onion, parmesan, spinach (with moisture squeezed out), and mix thoroughly.
  • Add stuffing and mix well.
  • Cover and chill 1/2 hour.
  • Preheat oven to 350°F Grease baking sheet. Roll spinach mix into balls the size of walnuts and place on baking sheet (they can be close together since they won't expand).
  • Bake 30 minutes. Remove from pan and sprinkle with remaining parmesan. Serve hot.
