A lower fat version of this favorite dessert. If you don't have dry buttermilk powder, use regular buttermilk; mix it in with the wet ingredients and omit the water.

Steps:
- 1. Preheat oven to 350 F. Coat an 8-inch square baking pan with nonstick cooking spray.
- 2. Combine flour, ginger, cinnamon, baking soda, sugar and buttermilk powder in a large mixingl bowl. Whisk together until blended.
- 3. Add remaining ingredients and stir until combined.
- 4. Pour into prepared pan and bake 25 minutes, or until wooden pick inserted in center comes out clean.
- 5. Cool in pan on wire rack. Serve warm or room temperature with a dollop of whipped cream.
