LOBSTER CORN CHOWDER CHRISTMAS SPECIAL image

Yield 4 bowls

Number Of Ingredients 8

1 1 1/2 pound lobster
2 medium potato, diced
1 medium onion, chopped
2 cups fresh corn kernels
1 quart half and half
4 tablespoons butter
1/8 teaspoon cayenne
salt and pepper to taste

Steps:

  • Cook lobster. Remove meat and coarsely chop. Reserve shells. Place lobster shells in large pot. Add half and half. Bring to boil and simmer 4 minutes, set a side. Melt butter in soup kettle. Add potatoes, onion and corn and saute about 5 minutes. Strain lobster cream into the soup kettle and simmer slowly until potatoes are soft about 8 minutes. Stir in lobster meat and seasonings. Simmer just until hot.
