Turn leftover mashed potatoes into a breakfast or brunch delight just by adding cheese, bacon, chives, a little butter and a fried egg. Different and delicious!

Steps:
- Gather and prep ingredients.
- In small skillet (preferrably nonstick,) melt 1/2 tablespoon butter over medium-low heat.
- While butter is melting, mix together the mashed potatoes, cheese, bacon bits and chives; form into a tight patty.
- Fry in the melted butter, over medium heat, for approximately 2 minutes or until edges are well browned.
- Gently shake the skillet to loosen patty; use a spatula to flip patty; fry for approximately 2 minutes or until edges are well browned.
- Slide patty onto serving plate; set aside.
- Use a paper towel to wipe brown bits from skillet.
- Place skillet back on stove; add and melt remaining 1/2 tablespoon butter over medium-low heat.
- Crack egg into melted butter; fry over medium heat until white of egg is almost totally cooked (about 2 minutes;) use spatula to flip egg. Shut off heat. Allow egg to remain in skillet for about 1 minute for "over easy."
- Slide fried egg onto fried potato patty.
- Garnish with additional cheese, bacon bits and chives. Serve immediately.
