FRIJOLES NEGROS (BLACK BEANS) image

Number Of Ingredients 20

For the Beans
1 pound dried black beans, rinsed
1 tbsp olive oil
1/2 large onion, chopped
1 green pepper, chopped
4-5 cloves of garlic, crushed
1 bay leaf
For the Sofrito
1/4 cup olive oil
1/2 large onion, finely chopped
3 cloves of garlic, finely chopped
1 bay leaf
1/2 tsp cumin
1/2 tsp oregano
1 tsp black pepper, to taste
1 1/2 tsp salt
2 tbsp sherry vinegar
1/2 cup dry white wine
1/4 cup green olives stuffed with pimento, thinly sliced
1 tsp sugar

Steps:

  • In a large pot soak beans overnight in 10 cups of water. Add remaining beans ingredients to soaked beans and bring to a boil. Lower heat and simmer for 1 hour. Skim foam. Sofrito: Warm 1/4 cup oil in a skillet over medium heat. Add onion, green pepper, and garlic and sauté for 5 minutes, or until soft. Add bay leaf, cumin, oregano, pepper and salt. Cook for 2 minutes more. Add Sofrito to beans. Stir n vinegar, wine and and olives, and bring to a boil. Lower heat and simmer, covered for about 1 to 1 1/2 hours, stirring frequently, until slightly thickened and cooked through. Remove bay leaves, adjust salt and pepper to taste and add sugar. Serve as a soup or a side dish, or over white rice.
