LIME POUND CAKE image

Number Of Ingredients 15

Cake:
3 c. flour, sifted
1/4 t. salt
1.5 c. unsalted butter
8 oz. cream cheese
3 c. sugar
6 eggs
1/2 t. vanilla
1/4 t. almond extrast
finely grated rind and juice of 1 lime
Glaze:
1/4 c. butter
1/4 c. sugar
3 T. lime jiuce
1/4 c. powdered sugar, sprinkle more for garnish

Steps:

  • Preheat oven to 325°. Grease 12 c. bundt pan. In a lagre bowl, beat butter, cream cheese and sugar until light and fluffy. Beat in eggs alternately with dry ingredients, mixing well after each addition. Add extraxts and lime nad mix to combine. Pour into prepared pan. bake 1.5 hours. Cool in pan 10 min. Turn onto a plate. While cake is warm, prick top with a toothpick and pour over hot glaze. For glaze: Combine ingredients in a saucepan. Bring to a boil and boil 1 min. Drizzle slowly over warm cake. Cool completely before slicing.
