LIGURIAN FISH STEW image

Number Of Ingredients 8

1 onion,
2 cloves garlic
1 carrot
3/4 cup pinot grigio
1 can San Marzano tomato
pinch red pepper flakes, to taste
1 cup water
1-1/2 lbs whitefish in chunks

Steps:

  • Heat dutch oven, add olive oil, then onion, carrot and garlic, salt. Let cook to soften vegetables. Add wine and scrape up brown bits. Then add tomatoes and water and let cook down a bit. Season fish with salt to coat all fish. Put into stew and cook through 6 - 7 minutes. Serve with a sprinkling of parsley
