Steps:
- Separate eggs. In a bowl combine egg yolks, ricotta and melted butter. Combine flour, sugar, salt and lemon zest and then slowly add dry ingredients to the ricotta mixture. Whip egg whites to form firm peaks. Fold egg whites gently into batter. Lightly butter griddle. form small hot cakes and cook until golden on both sides. Top with sugar and berries. NB - Make sure the griddle is not too hot!
