Lemon-Orange Picnic Cake image

Number Of Ingredients 15

CAKE
1 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons grated orange peel
1 teaspoon grated lemon peel
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
1/4 cup shortening
2 tablespoons orange juice
3 egg whites
TOPPING
1/4 cup sugar
2 teaspoons lemon juice
1 teaspoon orange juice

Steps:

  • 1. Heat oven to 350°F. Spray bottom only of 8-inch square pan with nonstick cooking spray. In large bowl, combine all cake ingredients beat at low speed until moistened. Beat 2 minutes at medium speed. Pour into sprayed pan.2. Bake at 350°F. for 25 to 32 minutes or until cake is light golden brown and toothpick inserted in center comes out clean.3. In small bowl, combine all topping ingredients mix well. Spread over warm cake. Cool 45 minutes or until completely cooled.High Altitude (above 3500 feet): Decrease sugar in cake to 2/3 cup.
