LEMON DILL CHICKEN image

Number Of Ingredients 9

4 Chicken Breasts, thawed
Extra Virgin Olive Oil
Saltine Crackers, crushed (approx. 1 Package/ about 40 crackers)
4 tbs butter or margarine
4 tsp Lemon juice
2 Bullion cubes, crushed
4 tsp Dill Weed, dried
1 Lemon, for garnish (optional)
Fresh Parsley, for garnish (optional)

Steps:

  • Prep Time: 15 min Preheat Oven Temp: 375 Cooking time: 45-50 min. Thaw out chicken according to directions and/or how many pounds the chicken would be. Preheat the oven to 375 degrees Fahrenheit. In a deep dish baking pan, line up the chicken so that they all fit in the pan. Take the Olive oil and gently rub some on the chicken (top and bottom). Crush saltine crackers. But do not make them like sand, you want the crackers to be a little crumbly. Take the crackers and evenly sprinkle them on the top of the chickens. Add 1 tablespoon of butter onto each of the chicken breasts. After that, you add your 1 teaspoon of lemon juice to each breast, evenly sprinkling it on them. Then you take the crushed bullion cubes and sprinkle it on the chicken. And last, but not least, you take the dill weed, and add it to the top of the chicken. Put aluminum foil over the top of pan. Place the chicken on the middle rack of the oven. Cook between 45 to 50 minutes. Checking the chicken after a about 35 minutes to make sure that the crackers are browning. Approx. 35 minutes into the cooking process, take the aluminum foil off, and put the chicken back in for about 10 to 15 minutes more. When it is done, pull it out, and let it cool for up to 5 minutes. Garnish with a lemon wedge per chicken, and add a little bit of parsley on the top to make it look presentable. This dish does well with many simple side dishes like, a side Caesar Salad, Mashed Potatoes, a baked potato, rice, and with a side of your common vegetables (i.e. Corn, Broccoli, green beans, green peas, etc)
