Leftover Mashed Potato Soup with Bacon image

This is a great way to use up leftover mashed potatoes - a hearty soup that's delicious on cold days.

Number Of Ingredients 8

3 cups mashed potatoes
1/2 cup chopped onion
3 cups skim milk
4 tablespoons bacon bits
1/4 cup grated cheddar cheese
1 tablespoon canola oil
1 vegetable bouillon cube
salt and pepper, to taste

Steps:

  • Heat oil in pot on medium. Add onion and cook onions until glassy.
  • Stir in milk.
  • Mix in mashed potatoes, bacon bits and bouillon cube. Heat and continue stirring until mixed and lump free.
  • Mix in cheese and serve.
