Leftover Chicken Noodle Soup image

We buy rotisserie chicken at the market a few times per month, and I love to make soup with the left over chicken. The broth for the soup is really flavorful, and it is packed with good stuff. I like to make it on a chilly day, or when the little one isn't feeling well. She loves her mama's chicken noodle soup :)

Number Of Ingredients 11

4 c chicken stock
2 c water
2 tsp chicken base
1 3/4 c rotini pasta
1 c chopped celery
1 1/2 c chopped carrots
1 small onion, chopped
1 Tbsp olive oil
3 c cooked chicken
1 Tbsp parsley flakes
1 tsp black pepper

Steps:

  • 1. Add oil to a large pot and heat over medium setting. Add onion, carrots, and celery - and cook until onion is soft.
  • 2. Next, add your stock and water. Bring to a boil. Add in the chicken base, and cook until carrots are tender.
  • 3. Reduce heat to a medium boil, and add in your pasta and chicken. Cook for about 10 minutes or until pasta is done. Stir in your parsley flakes and black pepper. Serve and enjoy.
