my husband came home with this recipe after he stayed with friend in arkansas but he said his friend had made with rice and made it hot like with hot sausage and hot rotel but you fix to your taste i like it hot but he likes it mild go figure lol

Steps:
- in large bowl mix raw hamb. meat and raw sausage together with rotel
- cut tops out of bell peppers and clean out inside. and then stuff pepper about half full with meat mixture add layer of velveeta and then fill the rest of pepper with meat mixture and wrap individual pepper in foil with open side towards top and place in glass baking dish and cook for about an hour on 400 degrees until you see juices in bottom of pan and peppers are tender
