LAMB AND SAUSAGE ORZO WITH ARTICHOKES image

1/2 lb. ground lamb
1/2 sweet Italian sausage
1/4 cup mint pesto (see recipe)
2 tbsp. olive oil
1 cup marinated artichoke hearts
1 cup orzo
1 large tomato, diced
1/4 lb. feta cheese

Steps:

  • Light grill. Bring water to boil in medium sauce pan. In a medium bowl, mix lamb, sausage and 3 tbsp pesto. Form the mixture into small patties and brush with oil. Thread artichoke hearts onto skewers. Grill patties and skewers about 8 minutes. Cook orzo until al dente. Drain and transfer to a bowl. Add tomato, feta and remaining pesto. Remove artichokes from skewers and add to bowl. Arrange orzo mixture on plates. Crumble patties on top.
