KitKat's Chocolate Mellow Pillows image

I just wanted to post a cookie recipe every day until Christmas. I love marshmallows so I thought "marshmaloows & Christmas how can you go wrong?" You cant. Its to good.This is my 2nd Christmas Cookie Recipe. It just looks so good. I got this one from Betty Crookers.com 25 days of Christmas. I love to bake so I just wanted to share this good recipe. I mean it's Betty Crooker you knwo its good. I will be the frist to admit yes I do get alot of my recipes from other online site. They make good stuff & I know my family will love it. So I want to share what I find with as much people as I can.

Number Of Ingredients 13

COOKIE:
1 package(s) double chocolate chunk cookie mix
1/4 cup(s) vegetable oil
2 tablespoon(s) water
1 - egg
2/3 cup(s) almonds, chopped
12 large marshmallows, cut in half
FROSTING:
1 cup(s) semi-sweet chocolate chips
1/3 cup(s) whipping cream
1 teaspoon(s) butter
1 teaspoon(s) vanilla extract
1/2 cup(s) powdered sugar

Steps:

  • First pre-heat the oven to 350F. Then in a large bowl combine the first 5 ingredients until soft dough forms. Drop dough by rounded Tbsp. 2 inched apart onto ungreased cookie sheet
  • Next bake for about 7 mins. Then remove from oven. Then immediately press the mellow halfs lightlycut side down onthe top ofeach cookie. Then return to the oven & bake for 1 to 2 mins more or until mellows has soften.
  • Then cool for about 2 mins & remove from cookie sheet to a cooling rack. Let completely cool about 15 mins.
  • Next in a 1 quart non-stick saucepan melt the chocolate chips over low heat. Make sure to stir until smooth. Then remove from the heat Then add in the whipping cream, butter & vanilla. Blend well until mixed. Then stirin the powdered sugar until smooth.
  • Then spread the forsting all over each cooled cookie. Covering the marshmallow. Let the cookies stand until the frosting has set.
