Cranberry Special Meatballs image

Quick and easy ~ few ingredients~ and can make ahead for the Holidays!! This recipe won first place in the cranberry appetizers in Wisconsin.

MEATBALLS:
1 1/2 lb ground beef
1 pkg 6 oz. stuffing mix
2 eggs
1 small onion chopped
1/2 tsp salt
1/4 tsp pepper
SAUCE:
1 can(s) whole berry cranberry sauce
1 jar(s) cilli sauce
1/2 tsp ground ginger (optional)
1 Tbsp brown sugar

Steps:

  • 1. Preheat oven 375 df ~ In large bowl combine beef, stuffing mix, eggs and onion, salt and pepper. Shape mix into 1 1/2" balls ~ Place on cookie sheet with rim and bake 15-20 min.
  • 2. SAUCE: In medium saucepan combine the Cranberry Sauce, chille sauce, brown sugar and ginger. Heat til mixture come to boil. Stir frequently ~ combine balls and sauce. Keep warm in crockpot.
