Kielbasa Sausage w/Sauteed Onions & Rice image

This is a good dish that will fill your family up, and it reheats well too. Enjoy!!

1 or 2 polska kielbasa sausage
1 1/4 onion, chopped finely
1 1/8 tsp seasonal salt
1 pkg parboiled rice
2 c beef broth, low sodium (i use the beef broth instead of water for the rice, plus add extra water if needed)
2 tsp beef bouillon, lose powder
2 c water

Steps:

  • 1. Cut sausage into slices, then I found cutting them into 4 quarters gives more sausage per bite, little triangle pieces. Chop onion finely. In a dutch oven or deep pot, first brown the onions with a little bit of olive oil, I like to get mine carmalized, and really brown. Add sausage and brown it some. Add in seasonal salt (add a little and taste, then add more as you think is needed), also add in beef bouillon powder.
  • 2. Once sausage is browned, add in 2 cups of parboiled rice and add 2 cups of beef broth and 2 cups of water.
  • 3. Stir everything together, let it come to a boil, then cover, turn heat down to simmer. Let simmer until rice is done. Fluff with a fork add some butter (if desired), and serve.
