Kielbasa & Cabbage Stew image

My Great Aunt worked as head cook for a large nursing facility for 30+ years. She made this stew often for some of her patients and they just raved about it. I'm not sure where she got this recipe but it sure is delicious!

2 Tbsp canola oil
1 lb smoked kielbasa, sliced
1 onion, chopped
2 carrots, shredded
4 Tbsp butter
1 small head of cabbage, cut into 1 inch pieces
1 tsp salt
1 tsp black pepper
1/4 tsp garlic powder
8 c chicken broth
4-5 medium potatoes, peeled and cubed
1 10.5 oz. can of cream of celery soup
1 Tbsp fresh parsley

Steps:

  • 1. Saute kielbasa in oil in a large pot or dutch oven until browned.
  • 2. Add onion and carrots and continue cooking until onins are semi translucent.
  • 3. Add butter, cabbage, salt, pepper and garlic powder and continue cooking for about 10 minutes.
  • 4. Add chicken broth and cook until cabbage is tender. Once cabbage is cooked, add potatoes and cook another 15-20 minutes until potatoes are tender. Add cream of celery soup, cover and simmer for 25-30 minutes longer. Add parsley just before serving.
