Kielbasa and Pasta Primavera Recipe image

This was my grandma's recipe and boy it's amazing! Also very cheap to make. Entire dish can be made for about $6

Number Of Ingredients 12

1/2 lb uncooked whole wheat linguine
1 lb kielbasa (cut 1/2 inch thick)
1 tablespoon olive oil
1 green bell pepper (cut into thin strips)
1 yellow bell pepper (cut into thin strips)
1 red bell pepper (cut into thin strips)
1 onion (chopped)
1 tablespoon dried parsley flakes
1 tablespoon dried oregano
1 1/2 teaspoons cayenne pepper or 1 1/2 teaspoons ground red pepper
4 fresh garlic cloves (minced)
1/2 cup parmesan cheese (grated)

Steps:

  • 1. Put water for pasta on high-heat.
  • 2. In large pot cook Kielbasa in Olive oil on medium-high heat for about 5 minutes.
  • 3. Add onion and garlic, cook on medium-high for another 3-5 minutes.
  • 4. Add in the peppers, parsley, oregano, and cayenne pepper and lower heat to medium-low.
  • 5. Pasta water should be boiling now. Put pasta in water.
  • 6. Cook peppers until tender. Cook pasta al dente.
  • 7. Strain and toss in cooked pasta; add grated cheese and toss well.
  • Refrigerate leftovers; this meal is even better the next day!
  • Adjust amounts of meat, veggies to your taste.
