KELLY'S YUMMY BAKED COD WITH BALSAMIC AND TOMATOES image

Yield makes 4 servings

Number Of Ingredients 5

4 5 oz cod fillets
1 large can crushed tomatoes in puree
1 large can of whole peeled tomoatoes
1 large onion (red or white)sliced
1 package of dried sundried tomoatoes (not in oil) soaked in water. (in most health food stores)

Steps:

  • Preheat oven to 350 degrees. Line a large baking dish with tin foil being sure to leave room to wrap up the fish. (longer on the sides) Place cod fillets in the dish side by side. Place whole peeled tomotoes only (not sauce) all over the fish. Pour crushed tomatoes (with sauce) all over fish as well. Scatter onions around the fish. Seal fish with foil being sure to wrap it up well. Bake for 10 min. at which point you open the foil and put the sundried tomatoes on top of the fish. Put the oven on broil and broil the fish with the foil open for another 10 min. or so or when fish is flaky to the touch. When fish is done serve it on a plate pouring extra sauce from baking dish on top of the fish.
