KALE & WHITE BEAN SOUP image

I REC'D THIS RECIPE FROM A CO-WORKER BEFORE I RETIRED. IF YOU LIKE KALE, YOU WILL ENJOY THIS SOUP.

Number Of Ingredients 11

1 small bunch of kale
2 teaspoon(s) olive oil
1 large onion, sliced into rings
4 - garlic cloves--finely chopped
1/4 teaspoon(s) red pepper flakes
1 can(s) cannellini beans--rinsed & drained
3 cup(s) chicken broth--fat free
2 cup(s) water
1/4 teaspoon(s) oregano--dried
- salt & pepper to taste
2 tablespoon(s) parmesan cheese

Steps:

  • WASH KALE WELL, REMOVE LEAVES FROM STEMS & DISCARD STEMS. TEAR LEAVES INTO PIECES. SET ASIDE
  • HEAT OLIVE OIL IN HEAVY PAN OVER MEDIUM HEAT & SAUTE ONION RINGS STIRRING OCCASIONALLY UNTIL IT BEGINS TO CARMELIZE (15 MINS OR SO)
  • ADD GARLIC & PEPPER FLAKES & SAUTE MIXTURE ANOTHER MINUTE.
  • ADD BEANS, BROTH, WATER & OREGANO, BRING TO SIMMER
  • ADD KALE & SIMMER UNCOVERED, STIRRING OFTEN UNTIL DONE. SEASON WITH SALT & PEPPER. I LET THE SOUP SIMMER FOR ALMOST AN HOUR ON LOW HEAT BEFORE SERVING.
  • SPRINKLE PARMESAN ON TOP OF SOUP BEFORE SERVING IF SO DESIRED.
