KALE – SAUTÉ WITH BEANS AND PASTA image

Number Of Ingredients 12

Garlic - 4 cloves sliced
2 - sliced
Kale - 2 bunches, torn in bite size pieces
½ tsp red pepper flakes
1.5 cups chicken broth
¾ tsp salt
1 can diced tomatoes - drained (optional)
½ cup cannellini beans, drain and rinse
¾ cp pitted kalamata olives - roughly chopped
Pasta - whole wheat; ½ cup cooked
¼ sliced sun dried tomatoes
2 ounces blue cheese

Steps:

  • Heat 2 T oil in sauté pan over medium and sauté garlic 3 minutes - remove when brown; lightly salt and set aside Sauté onion in same pan until starts to brown, add garlic, red pepper flakes and cook until garlic fragrant Gradually add greens to pan, tossing carefully. Add broth, tomatoes and ¾ tsp salt; cover (pan is very full) increase to high to bring to strong simmer then reduce to medium and cook covered, tossing occasionally, about 15 minutes. Stir in Olives, Dried tomatoes and beans. Sprinkle with blue cheese.
