Steps:
- 1. Preheat Oven to 350 degrees. Combine the first 10 ingredients until mixed. Do not over mix; as it will result in tough meatloaf
- 2. Put meatloaf mixture onto a oiled or parchment lined baking sheet. Top the mixture with bacon. Bake uncovered for 1 to 1 1/4 hours.
- 3. Brush with additional barbecue sauce as much as desired, return to oven and bake an additional 15 to 20 minutes or when internal temperature reaches 165 degrees.
- 4. Remove from oven and let rest 15 to 20 minutes. Jordan loves this meatloaf with mashed potatoes, homemade frozen corn and Jell-O Cake.
