Jalapeno Scalloped Corn image

I love this stuff....another one of South Texas best recipes. I'd like to hear if anyone else is from Texas....ain't it a great place to live!! :)

Number Of Ingredients 6

1 (16 ounce) frozen corn
1 (14 ounce) can cream-style corn
2 jalapeno peppers, seeded and chopped
6 green onions, chopped
1/2 cup sour cream
4 eggs, beaten

Steps:

  • Heat oven to 350. Spray a 13 x 9" baking pan with non-stick cooking spray.
  • Combine frozen corn, cream corn, jalapeno peppers, onions, sour cream and eggs in a large bowl.
  • Season to taste with salt and pepper.
  • Pour into baking dish and bake uncovered for 1 hour and 10 minutes or until golden and bubbly.
