ITALIAN TOMATO SOUP image

Yield 4-6 people

Number Of Ingredients 8

8 large tomatoes
1 large clove of garlic
3 tblsp Extra Virgin Olive Oil
1 tsp Thyme
1 tbp Basil
4 cups broth (vegetable or chicken)
3/4 lb various sausages (smoked bacon, pancetta, smoked link sausages, etc) diced
1 1/2 cup Anelli or similar pasta (measurement before cooking)

Steps:

  • In a large stock pot on low heat, lightly brown the garlic in the olive oil. Add tomatoes, sliced. Cook for approximately 10 minutes, or until all tomatoes are cooked throughout. Remove from heat and let cool 5-10 minutes. Using a food processor or a high powered blender, puree the tomatoes. Pour tomatoes and all broth back into the stock pot. Season with Basil and Thyme. In a separate sauce pan, brown the sausages together. Add to soup. Simmer on low heat for 30 minutes. Additional time can be taken to intensify flavors. In the last thirty minutes, add the pasta. Serve hot with fresh bread and salad. prep time: 30 min. total cook time: 1.5 hr.
