Italian Stir Fry image

Great Vegetarian way to use up all the garden squash!

Number Of Ingredients 7

3 medium summer squash, washed, cut into thin 1/2 slices
2 medium zuchinni squash, washed, cut into thin 1/2 slices
1 pound(s) angel hair pasta
3/4-1 cup(s) parmesan cheese, shredded
1/8 cup(s) butter
2-3 clove(s) garlic, minced
1-2 tablespoon(s) italian seasoning

Steps:

  • Boil pasta in large pot on stove. While cooking, cut up the squash and tomatoes. Mince 2-3 cloves of garlic. Heat up wok or large frying pan with the butter. Cook garlic in butter for just a few seconds; then add italian seasoning and squash. Cover. Drain noodles and set aside. Stir veggies and cook till tender but not totally soft. Add tomatoes in the last few mins. of stir-frying so they aren't mushy. Add cheese and pasta and stir.
  • It's that simple! Can be served as a meal with garlic bread or as a side dish with grilled meat.
