Honey-Lime Salmon Fillets image

Number Of Ingredients 9

3 tablespoons olive oil, divided
2 teaspoons honey
2 limes, zested, juiced and divided
4 salmon fillets
1 cup cherry tomatoes, halved
2 avocados, diced
1 cup cooked corn
1/2 red onion, thinly sliced
1/4 cup chopped fresh cilantro

Steps:

  • Heat grill for indirect cooking (or broiler), in bowl, whisk 1 Tbsp. oil, honey, 2Tbsp. lime juice and 1/2 tsp. lime zest. Rub mixture over salmon. Season with salt and pepper. Grill salmon skin side down, 10 min.
  • In bowl, toss tomatoes, avocados, corn, onions, cilantro, 2 Tbsp. lime juice, 1/2 tsp. lime zest and remaining oil. Season with salt and pepper. Serve salmon with avocado salad.
