ITALIAN POTATO SALAD image

Yield As a side dish, this will serve 10-12

Number Of Ingredients 10

5 lbs. of boiled but firm(not mushy) potatoes, cubed (with or without skins-I have done both)
4-5 stalks of celery, chopped
1 can of black olives, sliced
2 jars of marinated artichoke hearts, chopped
1 jar of garlic-marinated red peppers, diced - (or 1 whole roasted pepper marinated in olive oil and garlic.
1 clove of garlic, chopped
3/4 cup of olive oil
1/4 cup of cider vinegar
2 TBSP of oregano
Salt and pepper to taste

Steps:

  • After cutting up all ingredients, place together in a large bowl. Add Olive Oil, Cider Vinegar, Oregano, Salt and Pepper. Stir until all ingredients are covered. Add more oil if necessary to coat ingredients. Keep stirring over 1-2 hours to marinate salad. Add Salt and Pepper as needed. This can be refrigerated but should be served close to room temperature for best flavor.
