Irish Soda Bread image

There is a portion of my family that comes from Ireland...unfortunately, my taste for the cuisine is a bit lacking. But I did manage to find this great bread that I love to make because it is easy, it tastes great, and it looks great, too! And, it's the only reason I keep buttermilk in my fridge...

Number Of Ingredients 9

4 c flour
3 Tbsp sugar
1 Tbsp baking powder
1 tsp salt
3/4 tsp baking soda
6 Tbsp butter
1 1/2 c raisins (optional)
2 eggs
1 1/2 c buttermilk

Steps:

  • 1. Preheat oven to 350. Grease a 2 qt casserole dish, or spray with Pam for Baking (my favorite option). In a bowl, mix flour, sugar, powder, salt, soda, butter, and raisins. Set aside.
  • 2. In another bowl, mix eggs-reserve 1 tbsp for later use!, stir in buttermilk. Combine with Flour mixture.
  • 3. Turn dough onto floured surface and knead. shape into a ball and place in the casserole dish. Cut a 1 inch deep x in the top of the dough and brush on the 1 tbsp egg. Bake for 1 hour and 20 minutes. Soak in the smell, cause it's awesome!
