Irish Potatoes (candy) image

These Irish Potatoes are a delicious treat for any time, but especially around St. Patrick's Day. When I grew up in Philadephia,PA., this candy was a regular part of our St. Paddy's Day celebration and can still be found in stores around the wearin' o' the green. They are a coconut fondant, made from mashed potatoes, rolled in cinnamon. The finished product resembles little potatoes. Enjoy! Take note: The recipe calls for mashed potatoes. These are fully seasoned. You can use left overs from your dinner, make them fresh, buy them already made or use instant.

Number Of Ingredients 7

6 tablespoon(s) mashed potatoes
2 tablespoon(s) butter, softened
1/2 teaspoon(s) vanilla extract
1 1/2 pound(s) confectioners' sugar
1/4 teaspoon(s) salt
7 ounce(s) shredded coconut
- cinnamon

Steps:

  • Mix all ingredients together well (I use a stand mixer now, but used to mix them by hand). Shape into about 3/4-inch diameter balls, and roll in ground cinnamon, shaking off excess. Store in a sealed container, like a cookie tin or a Rubber Maid container.
