Irish Apple Crumble Cake image

Recipe has been posted here for play in Culinary Quest - Ireland. This recipe was found at http://www.donalskehan.com Apple crumble is one of my most favorite desserts, to this day I still swoon at the smell of it coming out of the oven. The classic combination of apple and blackberries could also be used here.

Time 55m

Number Of Ingredients 12

110 g butter plus extra for greasing
150 g soft light brown sugar
2 large free range eggs
210 g plain flour, sifted
1 tsp baking powder
pinch of salt
1 tsp ground cinnamon
300 g peeled, cored and sliced cooking apple (shouldn't be more than one large one)
CRUMBLE TOPPING
50 g vanilla sugar (or substitute with caster sugar)
50 g plain flour
50 g butter

Steps:

  • 1. Preheat the oven to 180°C, grease and line a 20cm cake tin with a removable base.
  • 2. With an electric hand mixer, beat the butter and sugar in a large bowl until pale. Add the eggs, one at a time, mixing until they are incorporated.
  • 3. Fold through the flour, baking powder, salt, and cinnamon until you have a thick cake batter.
  • 4. Stir through the apple and pour the batter into the cake tin. The batter will be thick, so use a spatula to spread across the base of the tin.
  • 5. Using a hand blender with a food processor attachment, blitz the ingredients for the crumble topping until you get left with rough crumbs.
  • 6. You can also do this by hand in a bowl using your fingertips to combine the ingredients together.
  • 7. Sprinkle the crumble topping on top of the batter.
  • 8. Bake in the oven for 40-45 minutes or until a skewer inserted into the center comes out clean.
  • 9. Remove from the oven and leave to cool.
