Number Of Ingredients 10

8 ounce(s) spaghetti
salt
FOR THE SAUCE
1/4 cup(s) olive oil
1/4 cup(s) butter
8 clove(s) garlic minced
1/4 cup(s) white wine
2 cup(s) fresh basil chopped
salt and pepper
1 cup(s) freshly grated pecorino romano plus more for serving

Steps:

  • Cook spaghetti in boiling salted water until almost al dente.
  • While spaghetti is cooking. Add the oil and butter to a large pan big enough to hold the spaghetti. Add the garlic and cook 1 minutes. Do not let it burn. Add the wine and let most evaporate. Add the basil. Cook 2 minutes. Add the spaghetti and about 1 cup pasta water and stir.
  • Add the cheese and cook until melted. Let sit for a couple of minutes until the pasta has absorbed all the fluid. Taste and season with salt and pepper. Serve garnished with cheese.
